Spaghetti Aglio e Olio (Garlic Spaghetti)

Instructions

  1. Start boiling a large pot of water.

  2. While water boils, thinly slice the garlic and mince the parsley.

  3. Add salt to the boiling water and cook pasta to al dente; reserve one cup of pasta water, then drain the pasta.

  4. Heat olive oil in a large pot over medium heat. Sauté half the sliced garlic until fragrant.

  5. Stir in salt, pepper, red pepper flakes, and minced parsley; cook for one minute, preventing garlic from over-browning.

  6. Add 0.5 cup reserved pasta water, the drained pasta, and the remaining garlic. Toss and cook for two minutes, or until heated through.

  7. Stir in Parmesan cheese and additional salt to taste. Serve immediately.
