Southwestern-Style Beef and Potato Casserole

Instructions

  1. Preheat oven to 350 F and grease a 9x13 inch baking pan.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add ground beef, onion, and celery; cook, stirring frequently, until beef browns and vegetables soften.

  4. Stir in garlic and jalapeño; cook for 1 minute.

  5. Add tomatoes, chili powder, salt, pepper, and cumin; bring mixture to a simmer.

  6. Layer half of the sliced potatoes, corn, beef mixture, and cheese in the prepared pan.

  7. Repeat layers with remaining ingredients, finishing with cheese.

  8. Cover with foil and bake for 75 minutes, or until potatoes are tender.
