Southwestern-Style Beef and Potato Casserole

Preheat oven to 350 F and grease a 9x13 inch baking pan.

Heat olive oil in a large skillet over medium heat.

Add ground beef, onion, and celery; cook, stirring frequently, until beef browns and vegetables soften.

Stir in garlic and jalapeño; cook for 1 minute.

Add tomatoes, chili powder, salt, pepper, and cumin; bring mixture to a simmer.

Layer half of the sliced potatoes, corn, beef mixture, and cheese in the prepared pan.

Repeat layers with remaining ingredients, finishing with cheese.
