Southwestern Ground Beef Casserole Recipe

Preheat oven to 350°F and spray a large baking dish.

Arrange biscuits in the dish to form a single crust; bake for 12 minutes until golden.

Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat; cook ground beef for 10 minutes until no longer pink.

Drain excess fat, then add taco seasoning, water, and salt; cook 3-4 minutes until water evaporates. Transfer to a bowl.

Heat remaining 1 tablespoon oil in the skillet; cook onions, bell peppers, and salt for 10 minutes until tender.

Stir in tomatoes and cook for 3 minutes until warmed through.

Mix sour cream, half the cheddar, and jalapeños in a bowl.

Layer the baked biscuit crust with ground beef, then the onion-pepper-tomato mixture, then the sour cream-cheddar mixture, and finally the remaining cheese.

To make two layers, divide the ground beef, vegetable, and sour cream mixtures in half, layering twice, with all remaining cheese on the final top layer.

Bake for 20 minutes until cheese is bubbling and slightly browned.
