Instructions

  1. Grease a 5-quart slow cooker.

  2. Layer cooked and drained sausage, onions, peppers, chiles, and cheese into the slow cooker.

  3. Beat eggs, then pour over the layered ingredients.

  4. Cover and cook on low for 7-8 hours (or 5.5 hours for newer models) until the internal temperature reaches 165 F.

  5. Serve immediately with sour cream or fresh salsa.
