Southwest Black Bean and Corn Salad Recipe

Instructions

  1. Combine beans, corn, pepper, tomatoes, onion, and cilantro in a large bowl.

  2. In a separate small bowl, whisk together lime juice, olive oil, sea salt, and cayenne pepper.

  3. Pour the dressing over the bean mixture and toss to combine.

  4. Fold in diced avocado; if too soft, place avocado on top of individual portions.

  5. Chill for at least one hour before serving to allow flavors to meld.
