Southern Wilted Lettuce with Hot Bacon Dressing

An old-fashioned Southern wilted lettuce salad, also known as kilt lettuce, is a simple classic featuring a tangy hot bacon dressing.

Instructions

  1. Cook 5 strips of bacon in a pan until desired doneness; drain bacon on paper towels and reserve 2 tablespoons of drippings.

  2. In a large bowl, combine 8 cups shredded lettuce and 3 to 4 chopped green onions; season with salt and pepper.

  3. In a saucepan, combine 2 tablespoons reserved bacon drippings, 2 tablespoons apple cider vinegar, and 1 tablespoon sugar; heat until boiling.

  4. Pour the hot dressing over the lettuce mixture; toss, top with crumbled bacon, and serve immediately.
