Instructions

  1. Preheat the oven to 350 F and prepare a 2 1/2- to 3-quart shallow baking dish.

  2. Start boiling a large saucepan of water. Peel and slice sweet potatoes into 1/2-inch rounds or bite-sized chunks, then add to the boiling water.

  3. Cover the pan and cook sweet potatoes for 12 to 14 minutes until tender-firm.

  4. Melt butter in the baking dish in the preheated oven for 3 to 5 minutes, ensuring it does not burn.

  5. In a bowl, combine flour, baking powder, salt, sugar, and milk to create the batter. Spoon this batter over the melted butter without stirring.

  6. For the syrup, mix granulated sugar, brown sugar, hot water, vanilla, and cinnamon until the sugars dissolve.

  7. Arrange the cooked sweet potatoes over the batter, then pour the prepared syrup mixture over them.

  8. Bake for 45 to 50 minutes, or until the top is golden brown.

  9. Serve the cobbler with ice cream, whipped cream, or whipped topping.
