Instructions
-
Preheat the oven to 350 F and prepare a 2 1/2- to 3-quart shallow baking dish.
-
Start boiling a large saucepan of water. Peel and slice sweet potatoes into 1/2-inch rounds or bite-sized chunks, then add to the boiling water.
-
Cover the pan and cook sweet potatoes for 12 to 14 minutes until tender-firm.
-
Melt butter in the baking dish in the preheated oven for 3 to 5 minutes, ensuring it does not burn.
-
In a bowl, combine flour, baking powder, salt, sugar, and milk to create the batter. Spoon this batter over the melted butter without stirring.
-
For the syrup, mix granulated sugar, brown sugar, hot water, vanilla, and cinnamon until the sugars dissolve.
-
Arrange the cooked sweet potatoes over the batter, then pour the prepared syrup mixture over them.
-
Bake for 45 to 50 minutes, or until the top is golden brown.
-
Serve the cobbler with ice cream, whipped cream, or whipped topping.
