Southern-Style Okra With Tomatoes and Rice

A flavorful okra and tomato mixture is simmered and thickened, then served over warm rice.

Instructions

  1. Start boiling 2 cups of water with 1 teaspoon of salt in a saucepan.

  2. Add rice, bring to a boil, then reduce heat, cover, and simmer for 18 minutes; let stand 5 minutes, then fluff.

  3. Meanwhile, bring a medium saucepan of water with 1 teaspoon of salt to a boil; add washed okra and cook for 10 minutes until tender, then drain.

  4. Heat vegetable oil in a skillet over medium heat, then sauté diced onion and bell pepper for 5 minutes until tender.

  5. Add diced tomatoes with their juices to the skillet, reduce heat to low, and cook for 5 minutes.

  6. Stir in the cooked okra and sugar, then season with salt and pepper to taste.

  7. Whisk 2 teaspoons of flour with 1 tablespoon of cold water to form a smooth paste, then add to the okra and tomato mixture, cooking until thickened.

  8. Serve the okra mixture spooned over the warm rice.
