Southern-Style Cornbread

Instructions

  1. Preheat oven to 425 F and place a 10-inch cast-iron skillet with shortening inside to heat.

  2. In one bowl, combine cornmeal, flour, salt, baking powder, baking soda, and sugar.

  3. In a separate bowl, whisk eggs, milk, and butter.

  4. Add wet ingredients to dry ingredients; stir until just moistened.

  5. Carefully remove the hot skillet, then tilt to coat the bottom and sides with melted shortening.

  6. Pour batter into the hot skillet and return to the oven.

  7. Bake for 20 to 25 minutes until browned and a toothpick inserted into the center comes out clean.
