Instructions
-
Preheat the oven to 375 F and butter a 9x13x2-inch baking pan.
-
In a stand mixer bowl, combine warm milk and yeast, letting it stand for a minute or two.
-
Add 1 egg, sugar, salt, butter, and flour to the bowl.
-
Using a dough hook, mix on low speed until combined, then increase to medium for 15 minutes, adding flour as needed until the dough separates from the bowl.
-
Turn the dough onto a lightly floured board and knead briefly to form a ball.
-
Place the dough ball in an oiled bowl, turn to coat, cover tightly, and let rise in a warm place for about 1 hour until doubled.
-
Transfer the dough to a lightly floured surface. Shape it into approximately twenty 1 1/4 ounce balls for a 9x13 pan, or twenty-four 1 ounce rolls for a larger pan, arranging them with slight space between.
-
Cover lightly and let rise in a warm place for 20 to 30 minutes.
-
For the topping, whisk the remaining egg with 1 teaspoon water and a pinch of salt, then brush the tops of the rolls.
-
Bake for 15 to 20 minutes until golden brown, reaching an internal temperature of approximately 190 F.
-
Serve the yeast rolls warm with butter.
