Instructions

  1. Preheat the oven to 375 F and butter a 9x13x2-inch baking pan.

  2. In a stand mixer bowl, combine warm milk and yeast, letting it stand for a minute or two.

  3. Add 1 egg, sugar, salt, butter, and flour to the bowl.

  4. Using a dough hook, mix on low speed until combined, then increase to medium for 15 minutes, adding flour as needed until the dough separates from the bowl.

  5. Turn the dough onto a lightly floured board and knead briefly to form a ball.

  6. Place the dough ball in an oiled bowl, turn to coat, cover tightly, and let rise in a warm place for about 1 hour until doubled.

  7. Transfer the dough to a lightly floured surface. Shape it into approximately twenty 1 1/4 ounce balls for a 9x13 pan, or twenty-four 1 ounce rolls for a larger pan, arranging them with slight space between.

  8. Cover lightly and let rise in a warm place for 20 to 30 minutes.

  9. For the topping, whisk the remaining egg with 1 teaspoon water and a pinch of salt, then brush the tops of the rolls.

  10. Bake for 15 to 20 minutes until golden brown, reaching an internal temperature of approximately 190 F.

  11. Serve the yeast rolls warm with butter.
