Southern Peanut Soup Recipe

Instructions

  1. In a pot, sauté celery and onion in butter over medium heat for 5 minutes. Stir in flour until blended.

  2. Add warm chicken broth and simmer on low heat, stirring occasionally, for 30 minutes.

  3. Remove from heat. Strain the broth, discard solids, and return broth to the pot. Whisk in peanut butter, lemon juice, salt, and celery salt. Cook, whisking frequently, until smooth and heated through.

  4. Ladle into bowls and serve with chopped peanuts.
