Southern Mandarin Orange Cake

A beloved Southern dessert, this mandarin orange cake features a light citrus flavor and is topped with a sweet pineapple frosting.

Instructions

  1. Preheat the oven to 350 F and grease and flour 3 (9-inch) cake pans.

  2. In a mixing bowl, combine cake mix, mandarin oranges, mandarin orange juice, eggs, and oil; beat for 2 minutes with an electric mixer.

  3. Pour batter evenly into prepared pans and bake for 20 to 25 minutes, or until a cake tester comes out clean.

  4. Cool cakes in pans for 5 minutes, then turn out onto wire racks to cool completely.

  5. For the frosting, combine whipped topping, pineapple, pineapple juice, and dry vanilla pudding mix; mix well.

  6. Frost the bottom layer with 1/4 of the frosting, add the next layer and frost with another 1/4, then frost the top and sides of the final layer with the remaining frosting.
