Southern Killed Lettuce Recipe

A traditional Appalachian Southern killed lettuce salad features fresh greens quickly wilted with hot bacon drippings and softened onions.

Instructions

  1. Wash and thoroughly dry greens, then place them in a serving bowl.

  2. Heat bacon drippings with sliced onion in a skillet over medium heat until the onion softens.

  3. Pour the hot onion and bacon mixture over the greens, then toss well to coat.

  4. Optionally, add diced bacon, crushed red pepper flakes, or hot sauce.
