Southern Fried Chicken With Cream Gravy Recipe

Southern fried chicken pieces, pan-fried until crispy, are served with a traditional creamy milk gravy.

Instructions

  1. Heat 1 to 2 inches of oil or shortening in a deep skillet or Dutch oven to 350 F.

  2. Sift flour, salt, and pepper into a wide bowl.

  3. Dredge each chicken piece in the seasoned flour and place the largest pieces first into the hot fat, maintaining 350 F; cover and cook for 5 minutes.

  4. Uncover, turn chicken when browned, re-cover for 5 minutes, then uncover and continue cooking until the second side is browned.

  5. Cook chicken for a total of 30 to 35 minutes, turning only once.

  6. For the gravy, drain all but 2 tablespoons of fat from the skillet, then add 2 tablespoons butter and 4 tablespoons flour; cook, scraping browned bits, until golden brown.

  7. Gradually stir in 1 cup milk and 1 cup hot water; cook until smooth and thickened, then season with salt and pepper.

  8. Serve the fried chicken hot with the creamy gravy.
