Southern Dirty Rice With Sausage

Instructions

  1. Brown sausage in a skillet until no longer pink, breaking it up.

  2. Stir in minced onion and cook for 2-3 minutes.

  3. Drain most of the excess fat.

  4. Add broth and rice, then cover and simmer for 18-20 minutes until rice is tender and broth is absorbed.

  5. Fold in fresh parsley.

  6. Season with salt and pepper to taste.
