Southern Dirty Rice With Sausage
A simplified dirty rice features seasoned sausage, rice, and onions, offering a liver and gizzard-free version of the classic dish.

Instructions

Brown sausage in a skillet until no longer pink, breaking it up.

Stir in minced onion and cook for 2-3 minutes.

Drain most of the excess fat.

Add broth and rice, then cover and simmer for 18-20 minutes until rice is tender and broth is absorbed.

Fold in fresh parsley.
