Southern Corn Sticks

A Southern classic, corn sticks offer a fun alternative to cornbread or muffins, prepared in a special cast-iron pan.

Instructions

  1. Preheat the oven to 425 F. Grease a corn stick pan with oil and place it in the oven.

  2. Combine cornmeal, flour, salt, baking powder, baking soda, and optional sugar in a mixing bowl.

  3. Whisk egg, milk, and melted butter or oil in another bowl; add to dry ingredients and stir until moistened.

  4. Spoon batter into the hot corn stick pan, filling each mold 3/4 full.

  5. Bake for 12 to 15 minutes, until golden brown.

  6. Cool for 5 minutes, then carefully remove corn sticks from the pan. Brush with melted butter if desired; repeat with remaining batter.
