Southern Chocolate Chess Pie

Instructions

  1. Preheat the oven to 375 F (190 C).

  2. Line the unbaked pie shell with foil or parchment and pie weights, then bake for 15 minutes.

  3. Remove weights and lining, then bake the shell for another 5 minutes until lightly colored; set aside.

  4. Reduce oven temperature to 350 F.

  5. Melt butter and chocolate in a heatproof bowl over simmering water until smooth.

  6. Stir sugar, flour, salt, milk, eggs, and vanilla into the chocolate mixture, then beat for 5 minutes with an electric mixer, scraping the bowl.

  7. Pour the filling into the prepared pie shell.

  8. Bake at 350 F for 35 to 45 minutes, or until the filling is set. Use a pie shield if crust browns excessively.

  9. Cool completely on a rack, then refrigerate until thoroughly chilled before serving.
