Southern Chocolate Chess Pie

Preheat the oven to 375 F (190 C).

Line the unbaked pie shell with foil or parchment and pie weights, then bake for 15 minutes.

Remove weights and lining, then bake the shell for another 5 minutes until lightly colored; set aside.

Reduce oven temperature to 350 F.

Melt butter and chocolate in a heatproof bowl over simmering water until smooth.

Stir sugar, flour, salt, milk, eggs, and vanilla into the chocolate mixture, then beat for 5 minutes with an electric mixer, scraping the bowl.

Pour the filling into the prepared pie shell.

Bake at 350 F for 35 to 45 minutes, or until the filling is set. Use a pie shield if crust browns excessively.

Cool completely on a rack, then refrigerate until thoroughly chilled before serving.
