Instructions

  1. Toast coriander seeds in a dry skillet over medium-low heat for 1 minute until fragrant, then coarsely grind them and set aside.

  2. Heat oil in the same pan over medium heat until shimmering; add mustard seeds, curry leaves, and green chiles, frying until splattering stops.

  3. Stir in ginger and peanuts, frying for 1 minute until fragrant.

  4. Add turmeric powder and turn off the burner.

  5. Mix in lemon juice, rice, the toasted coriander powder, and salt, stirring thoroughly before serving.
