Instructions

  1. Preheat a sous vide machine in a large pot of water to 172°F.

  2. Cook bacon until crisp, then blend eggs, cheese, heavy cream, cream cheese, salt, and pepper until smooth.

  3. Grease six 4-ounce jars or ramekins, add half a cooked bacon piece to each, then pour in the egg mixture.

  4. Seal each jar with its lid to a "two-finger twist tight" level.

  5. Submerge the sealed jars in the preheated water bath and cook for 1 hour; remove with tongs.

  6. Loosen the egg bites with a knife, flip onto a plate, and serve with chives.
