Instructions

  1. In a large non-reactive bowl, dissolve yeast in 1/2 cup warm water, then stir in 2 cups warm water, 2 cups flour, and sugar until smooth.

  2. Transfer the mixture to a non-reactive container at least four times its volume, covering it with cheesecloth secured by a rubber band.

  3. Allow the mixture to stand at room temperature for 5 to 10 days until bubbly, stirring 2 to 3 times daily.

  4. If separation occurs or a funky smell develops, pour off any surface liquid ('hooch') and feed the starter as directed.

  5. Once ready, use the starter immediately or refrigerate it and feed weekly.
