Preheat the oven to 350 F.

Line two baking sheets with parchment paper.

Sift flour, baking soda, and salt into a large bowl.

Cream butter in a mixer for about 4 minutes until light and fluffy.

Add granulated and brown sugars, then beat for about 5 more minutes until light and fluffy.

Mix in the egg, sourdough discard, and vanilla extract until just combined.

In two additions, mix in the sifted dry ingredients on low speed until just incorporated, avoiding overmixing.

Stir in the chopped chocolate until fully combined.

Scoop 3-tablespoon cookies onto prepared sheets, leaving 2 inches between each, and freeze for at least 20 minutes.

Bake cookies at 350 F in batches for 16 to 18 minutes until edges brown and centers puff.

Cool cookies on the tray for about 5 minutes, then transfer to a rack to cool completely.
