Sourdough Challah Snails
Sourdough challah snails are sweet, enriched bread rolls prepared with sourdough starter, eggs, and honey, often shaped to symbolize the new year.

Preheat the oven to 400 F.

In a stand mixer bowl, combine sourdough starter, water, whole eggs, egg yolks, honey, vegetable oil, and salt; whisk until combined.

Gradually add flour and mix until a shaggy dough forms, then knead with a dough hook for 10 to 12 minutes until smooth and elastic.

Cover the dough and let it rise until doubled in size, which may take 4 to 8 hours.

Punch down the dough and divide it into 12 equal balls.

For the filling, stir tahini, brown sugar, egg, cinnamon, and salt together in a bowl.

Roll each dough ball into a flat circle, spread 1-2 tablespoons of tahini filling onto it, then roll into a log and curl into a snail shape.

Place the shaped rolls on a parchment-lined baking sheet, cover, and let rise for another hour.

Whisk an egg with honey and 1 teaspoon water to create an egg wash; brush it over the rolls and sprinkle with sesame seeds.

Bake for 15 to 20 minutes until golden brown and firm, then cool before slicing and serving.
