Sour Cream Devil's Food Cake

Instructions

  1. Preheat the oven to 350 F/180 C/Gas Mark 4.

  2. Grease and flour two 9-inch cake pans.

  3. Combine flour, baking powder, and salt in a bowl.

  4. Beat butter and sugar with an electric mixer until light; add eggs one at a time, beating after each.

  5. Stir baking soda into sour cream or buttermilk.

  6. Alternately add dry ingredients and sour cream mixture to the butter-sugar mixture, beating after each addition.

  7. Mix cocoa powder with hot water until smooth.

  8. Add the cocoa mixture and vanilla to the batter; beat until smooth.

  9. Pour batter into the prepared cake pans.

  10. Bake for 30 to 40 minutes, or until the cake springs back when lightly touched.

  11. Cool in pans on racks for 10 minutes, then remove cakes and cool completely.

  12. Frost with your preferred icing.
