Instructions

  1. Preheat the oven to 425 F.

  2. For the pie crust: Combine 1 1/3 cups flour, 1 tablespoon sugar, and 1/2 teaspoon salt in a food processor. Pulse in butter until coarse crumbs form, then gradually add 3-4 tablespoons ice water, pulsing until dough clumps. Knead briefly, shape into a disk, refrigerate for 20-30 minutes, then roll into an 11-12 inch circle and fit into a 9-inch pie plate.

  3. For the filling, mix 3/4 cup sugar and 2 tablespoons flour in a large bowl. Stir in sour cream, egg, vanilla, and 1/8 teaspoon salt, then add the apples. Pour the mixture into the prepared pie shell.

  4. Bake the pie at 425 F for 20 minutes.

  5. Remove the pie from the oven and reduce the oven temperature to 325 F.

  6. Prepare the topping: Combine 1/3 cup sugar, 1 teaspoon cinnamon, and 1/3 cup flour; cut in butter until crumbly. Sprinkle this mixture evenly over the apples.

  7. Return the pie to the 325 F oven and continue baking for another 20 minutes.
