Sour Cream and Chive Biscuits

Instructions

  1. Preheat the oven to 400°F.

  2. Grease a 9x9 inch square pan and line its bottom with parchment paper.

  3. Process flour, baking powder, baking soda, salt, and pepper in a food processor.

  4. Add cold butter and chives, then pulse until the mixture resembles coarse meal.

  5. Transfer the mixture to a large bowl, add sour cream, and combine with a spoon until a shaggy dough forms.

  6. Knead the dough a few times on a work surface until integrated.

  7. Pat or roll the dough into a 1 1/2-inch thick rectangle.

  8. Cut out biscuits using a floured 3-inch cutter and place them touching in the prepared pan.

  9. Reroll and cut any dough scraps.

  10. Tightly wrap the pan and freeze the biscuits for at least 2 hours.

  11. Whisk one egg and salt for an egg wash.

  12. Brush the frozen biscuits with the egg wash.

  13. Bake for 30 to 35 minutes, rotating halfway, until golden brown.

  14. Let biscuits sit for 1 to 2 minutes in the pan before handling.
