Soft Pretzel Bites

Instructions

  1. Preheat oven to 400 F (200 C). Line two baking sheets with lightly greased parchment paper.

  2. Start boiling a large pot of water.

  3. Combine water, sugar, and yeast in a large bowl; let foam for 10 minutes.

  4. Stir in 2 cups flour until smooth.

  5. Add remaining 1 cup flour, salt, and melted butter; knead for 7 minutes with a dough hook or 10 minutes by hand until soft and tacky.

  6. Transfer dough to a greased bowl, cover, and let rise in a warm place until doubled (45-60 minutes).

  7. Punch down dough, transfer to a floured surface, and divide into 4 equal pieces.

  8. Roll each dough portion into a 10-12 inch log, then slice into 1-inch pieces; cover with a damp towel.

  9. Slowly add baking soda to boiling water and reduce heat to medium.

  10. Add 9-10 dough pieces to water, swirl for 15 seconds, then transfer to prepared baking sheets, spacing 1.5 inches apart. Repeat with remaining dough.

  11. Sprinkle salt on damp dough. Bake for 12-15 minutes until golden brown.

  12. While pretzels bake, melt butter in a medium saucepan.

  13. Add flour, dry mustard, and black pepper; whisk constantly for 2 minutes until fragrant.

  14. Gradually whisk in milk; continue whisking until thickened (2-3 minutes).

  15. Stir in cheese until smooth, then add hot sauce and salt to taste.

  16. Serve dip immediately with warm pretzels.
