Soft Pretzel Bites

Instructions

Preheat oven to 400 F (200 C). Line two baking sheets with lightly greased parchment paper.

Start boiling a large pot of water.

Combine water, sugar, and yeast in a large bowl; let foam for 10 minutes.

Stir in 2 cups flour until smooth.

Add remaining 1 cup flour, salt, and melted butter; knead for 7 minutes with a dough hook or 10 minutes by hand until soft and tacky.

Transfer dough to a greased bowl, cover, and let rise in a warm place until doubled (45-60 minutes).

Punch down dough, transfer to a floured surface, and divide into 4 equal pieces.

Roll each dough portion into a 10-12 inch log, then slice into 1-inch pieces; cover with a damp towel.

Slowly add baking soda to boiling water and reduce heat to medium.

Add 9-10 dough pieces to water, swirl for 15 seconds, then transfer to prepared baking sheets, spacing 1.5 inches apart. Repeat with remaining dough.

Sprinkle salt on damp dough. Bake for 12-15 minutes until golden brown.

While pretzels bake, melt butter in a medium saucepan.

Add flour, dry mustard, and black pepper; whisk constantly for 2 minutes until fragrant.

Gradually whisk in milk; continue whisking until thickened (2-3 minutes).

Stir in cheese until smooth, then add hot sauce and salt to taste.

Serve dip immediately with warm pretzels.
