Instructions

  1. Preheat oven to 350 F with racks in the upper and lower thirds, then line 2 baking sheets with parchment paper and spray them.

  2. In a stand mixer, cream butter, peanut butter, brown sugar, and granulated sugar on high speed until light and fluffy for about 5 minutes, scraping the bowl as needed.

  3. Beat in eggs one at a time on medium-low until combined, then mix in vanilla.

  4. Stir in flour, salt, baking soda, and baking powder on low speed until just combined, about 1 minute.

  5. Scoop dough onto prepared baking sheets, spacing mounds 2 inches apart.

  6. Sprinkle dough mounds with granulated sugar, then chill sheets in the freezer for 20 minutes until firm.

  7. Bake chilled cookies for 12 to 14 minutes, until edges begin to set.

  8. Cool cookies on baking sheets for a few minutes, then transfer to a rack to cool completely.
