Smoky Mesquite Marinade

Instructions

  1. Combine olive oil, rice wine vinegar, red wine, garlic, lemon juice, sugar, salt, and pepper in an open pot.

  2. Heat one side of the grill; add a soaked mesquite wood chunk to hot coals or lava rocks, adjusting heat to produce smoke without flame.

  3. Place the pot of marinade on the unheated side of the grill, close the lid, and smoke for 20 to 25 minutes.

  4. Remove the pot and stir in additional red wine to replace any evaporated liquid.

  5. Cool the marinade to room temperature, then refrigerate in a tightly closed container if not used immediately.
