Smoky Chipotle Chicken Salad

Instructions

Arrange chicken in a pot, cover with water (and wine if desired), then add salt and seasonings.

Bring the water to a boil, then reduce heat to low, cover, and simmer for 10-14 minutes until chicken reaches 165 F.

Remove chicken from the poaching liquid and allow it to cool.

In a large bowl, combine mayonnaise, vinegar, pureed chipotles, thyme, salt, and pepper.

Stir in celery, onions, bell pepper, and the cooled chicken until thoroughly combined.
