Smoked Whole Chicken

Instructions

  1. Combine salt, sugar, pepper, paprika, thyme, and garlic.

  2. Rub the chicken thoroughly with the spice mixture, ensuring coverage inside, out, and under the skin.

  3. Refrigerate the chicken for 2 to 8 hours.

  4. Prepare a smoker with fruitwood chips. Smoke the chicken at 250 F (120 C) until the internal breast temperature reaches 160 F (approximately 3 hours or 45 minutes per pound).

  5. Remove the chicken, tent with foil, and let rest for 20 minutes.

  6. Carve and serve the chicken with preferred sides.
