Smoked Turkey or Chicken Marinade

Instructions

  1. Whisk olive oil, soy sauce, lemon juice, and mustard in a small bowl.

  2. Stir in chives, sage, oregano, parsley, thyme, garlic, and paprika.

  3. Cover, refrigerate the marinade for 30 minutes, and reserve half for basting during smoking.

  4. Place the turkey or chicken in a container, pour the remaining marinade over, coating thoroughly, then seal and refrigerate for 8 to 24 hours.

  5. Before smoking, stuff the bird's cavity with chopped apples, oranges, and sweet onions.
