Smoked Standing Rib Roast

Instructions

Preheat the smoker to 225 F to 250 F for approximately 3 hours of smoke.

Trim any loose fat from the roast, ensuring all attached fat remains.

Combine olive oil, black pepper, minced garlic, and sea salt in a small bowl.

Rub the seasoned oil thoroughly over the entire roast, prioritizing the top side.

Place the roast into the smoker with the fat side up and bone side down; position the bone ends away from any direct heat source.

Rotate the roast halfway through the cooking duration to promote even doneness. Continue smoking until an internal thermometer in the thickest part reads at least 125 F, or for 3 to 4 hours.

Remove the roast, transfer it to a cutting board or baking dish, cover loosely with aluminum foil, and let rest for 20 to 30 minutes.
