Smoked Potato Skins

Smoked potato skins make an excellent appetizer, allowing the smoky flavor to deeply infuse into the potatoes at a low cooking temperature.

Instructions

  1. Preheat a smoker to 200 F (95 C).

  2. Bake potatoes until tender.

  3. Cut baked potatoes lengthwise into quarters.

  4. Scoop out potato flesh, leaving 1/2-inch thick shells.

  5. Brush shells with olive oil and season both sides with dry ingredients.

  6. Smoke the prepared skins for 20 to 40 minutes.

  7. Sprinkle cheese on skins and continue smoking until melted.

  8. Top with chopped green onions and serve alongside barbecue sauce.
