Smoked Pork Butt With Potatoes and Cabbage

Place smoked pork butt in a Dutch oven, add water to cover, and stir in brown sugar.

Cover and bring the pot to a boil, then reduce heat and simmer partially covered for 2 hours.

After 1 hour of simmering, add cabbage and peppercorns; return to a boil, then reduce heat and continue simmering.

About 30 minutes before total cooking time is complete, add whole potatoes; bring to a boil again, reduce heat, and continue simmering until the meat and potatoes are tender.

Transfer the cooked meat to a cutting board, slice, and arrange with the cabbage wedges and potatoes.
