Smoked Lemon Chicken

Instructions

  1. Trim excess fat and skin from the chicken, then clean the cavity.

  2. Rub the chicken with lemon juice and salt. Combine bread crumbs, garlic, pepper, and tarragon.

  3. Stuff the chicken with one-third of the mixture, add a whole lemon, then add the remaining stuffing. Refrigerate for 2 hours.

  4. Prepare the smoker or grill with fruitwood chips. For smoking, add chicken when coals are 80% white and cook for 2-3 hours. For grilling, preheat the grill, place chicken on a rotisserie rod, and cook for 1-1.5 hours until its internal temperature reaches 175 F.

  5. Remove the cooked chicken, tent with foil, and let it rest for 10-15 minutes.

  6. Discard the stuffing and lemons, then carve and serve the chicken.
