Smoked Beer Can Chicken

Instructions

  1. Preheat a smoker to 225-250 F.

  2. Mix 2 teaspoons mild chili powder, 1.5 teaspoons salt, and 1 teaspoon onion powder, then rub this seasoning over a 4-pound whole chicken with giblets removed.

  3. Open a can of beer, pour out half, cut off the top, and add 2 tablespoons chopped onion, 2 tablespoons apple cider vinegar, and 3 minced garlic cloves to the can.

  4. Carefully place the chicken cavity over the prepared beer can, ensuring it stands upright on the smoker rack.

  5. Smoke for 3-4 hours, or until the chicken thigh's internal temperature reaches 165-170 F.

  6. Remove the chicken from the smoker, tent with foil, and rest for 7-10 minutes before removing the can and carving.
