Smen is a cheese-like Moroccan preserved butter, traditionally added to tagines and other Moroccan dishes.

Instructions

Melt butter in a small saucepan over low heat, then simmer on medium-low for 45 minutes until milk solids are light amber.

Strain the clarified butter through cheesecloth into a bowl, ensuring all milk solids are removed for a perfectly clear product.

Stir salt into the strained butter, pour into a jar, cover, and store in a cool, dark place for a minimum of one month.
