Smashed Plantain Sandwich (Jibarito)

A jibarito sandwich features roast beef, Swiss cheese, lettuce, tomato, and mayonnaise layered between crispy, smashed fried plantains.

Instructions

  1. Heat oil to 350 F in a large skillet.

  2. Peel plantains, then cut each in half crosswise and lengthwise.

  3. Fry plantains for 4 minutes; remove and drain on paper towels.

  4. Flatten the plantains, then re-fry in batches for another 4 minutes or until crispy; drain, salt lightly, and set aside.

  5. Combine mayonnaise, chili powder, cumin, and garlic powder in a small bowl.

  6. Spread the mayonnaise mixture onto one side of the flat plantains.

  7. Assemble the sandwich by layering tomatoes, onions, cheese, roast beef, and lettuce between the plantain halves.

  8. Insert a toothpick with olives into the sandwich and serve immediately.
