Smashed Plantain Sandwich (Jibarito)
A jibarito sandwich features roast beef, Swiss cheese, lettuce, tomato, and mayonnaise layered between crispy, smashed fried plantains.

Instructions

Heat oil to 350 F in a large skillet.

Peel plantains, then cut each in half crosswise and lengthwise.

Fry plantains for 4 minutes; remove and drain on paper towels.

Flatten the plantains, then re-fry in batches for another 4 minutes or until crispy; drain, salt lightly, and set aside.

Combine mayonnaise, chili powder, cumin, and garlic powder in a small bowl.

Spread the mayonnaise mixture onto one side of the flat plantains.

Assemble the sandwich by layering tomatoes, onions, cheese, roast beef, and lettuce between the plantain halves.

Insert a toothpick with olives into the sandwich and serve immediately.
