Instructions

  1. Preheat the oven to 450 F.

  2. Arrange 4 lamb shanks in a single layer in a roasting pan, rub with 2 tablespoons olive oil, and season with salt and pepper.

  3. Roast for 20 minutes until browned, then remove and reduce oven temperature to 325 F.

  4. While the oven cools, remove excess fat from the pan and scatter 6 pierced, unpeeled garlic cloves and 6 fresh rosemary sprigs around the lamb.

  5. Tightly cover the pan with heavy-duty foil and roast for an additional 2 hours without opening.

  6. Remove the foil, add 1 cup chicken broth, increase heat to 400 F, and roast for 15 minutes until browned and fork-tender.

  7. Transfer lamb shanks to a platter and spoon pan juices, garlic, and rosemary over them to serve.
