Instructions

  1. Preheat the oven to 450 F.

  2. Remove netting and trim excess fat from a 4-pound boneless pork roast.

  3. Combine 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp ground cumin, and 1/2 tsp dried thyme, then rub the mixture over the pork.

  4. Heat a heavy, oven-proof skillet over high heat and sear the roast on all sides for about 10 minutes until browned.

  5. Cover the pork with foil, place the skillet in the oven, reduce the temperature to 325 F, and roast for 3 hours.

  6. Remove the foil and continue roasting for about 1 more hour until the pork is fork-tender, reaching 180-185 F.

  7. Rest the meat for 15 minutes, then shred using two forks and serve, optionally with barbecue sauce.
