Slow Cooker Zucchini and Tomatoes

Instructions

  1. Combine zucchini and tomatoes with salt, pepper, and basil in a slow cooker.

  2. Cook covered on low for 3 hours.

  3. Add butter and Parmesan cheese, then continue cooking on low for an additional 1 to 1 1/2 hours.

  4. Serve, optionally garnished with fresh chopped parsley.
