Slow Cooker Pulled Pork Barbecue Recipe

A simple slow cooker method yields tender pulled pork barbecue, perfect for sandwiches, using a large pork butt or shoulder roast.

Instructions

  1. Layer one sliced onion in the slow cooker, then top with the seasoned pork roast; if using, stud the pork with cloves or place them in a bag.

  2. Cover the pork with another sliced onion, add 2 cups of water, and cook on low for 9 to 12 hours until very tender.

  3. Remove the pork from the slow cooker, discard cloves, excess fat, bones, and optionally the cooked onions; then shred the pork once cool enough to handle.

  4. Return the shredded pork to the slow cooker. Stir in finely chopped onion, barbecue sauce, and optional red pepper flakes and liquid smoke.

  5. Cook on high for 1 to 2 hours, until the added onions are tender.

  6. Serve the pulled pork on crusty buns, garnished with desired toppings like pickles, raw onion, and pickled banana peppers, and with a side of slaw.
