Slow Cooker Pork With Cabbage

Instructions

  1. Combine cabbage, onion, garlic, brown sugar, vinegar, and thyme in a 4 to 5-quart slow cooker.

  2. Season the pork roast with salt and pepper. Optionally, brown the pork in olive oil for 5 to 6 minutes, then deglaze the skillet with 1/4 cup water and add this liquid to the slow cooker.

  3. Place the pork roast on top of the vegetables in the slow cooker, cover, and cook on Low for 7 to 8 hours or until it reaches 145 F.

  4. Remove the pork, cover, and let stand for 10 minutes before slicing and serving with the cabbage mixture.
