Slow Cooker Pork, Sauerkraut, and Sausages (Choucroute Garnie)

An easy and hearty slow cooker dish, this Alsatian-style preparation combines pork, various sausages, and sauerkraut with traditional seasonings.

Instructions

  1. Place pork loin in the slow cooker, then add smoked sausage cut into 2- to 3-inch pieces along with knockwurst or bratwurst.

  2. In a bowl, combine rinsed sauerkraut, brown sugar, mustard, and seeds; stir well.

  3. Spoon this mixture over the meat in the slow cooker and tuck in a bay leaf.

  4. Cover and cook on low for 7 to 9 hours or on high for about 4 hours.
