Slow Cooker Pork Loin Barbecue

Instructions

  1. Heat oil in a large skillet over medium heat; cook onion for 3 minutes.

  2. Season the de-netted pork roast with salt and pepper, then brown it on all sides with the onion in the skillet for 8 to 10 minutes.

  3. Transfer the browned roast and onion to a slow cooker.

  4. Combine barbecue sauce, brown sugar, cider vinegar, soy sauce, ginger, garlic, and black pepper in a bowl, then pour the mixture over the roast.

  5. Cook on low for 5 to 7 hours, or until the roast is tender and reaches 145 F.

  6. Remove the pork to a platter; skim fat from the sauce, then transfer the sauce to a saucepan.

  7. Bring the sauce to a boil and cook, stirring occasionally, for 4 minutes until reduced and thickened.

  8. Return the pork and thickened sauce to the slow cooker to keep warm.

  9. Slice and serve.
