Slow Cooker Pork and Sweet Potatoes

Chop the peeled onion and bell pepper, then peel and cut sweet potatoes into 1-inch pieces.

Lightly oil the slow cooker, then trim and pat dry the pork roast before placing it in the cooker with the prepared vegetables around it.

Combine tomatoes, brown sugar, cinnamon, and black pepper in a bowl; mix thoroughly.

Spoon the tomato mixture over the pork and vegetables, adding 1/2 cup of chicken stock if the tomatoes lack juice.

Cover and cook on high for 3 hours or low for 5 hours; extend cooking time by 1 hour on low or 30-45 minutes on high for fall-apart pork.

Serve the cooked pork and sweet potatoes on a platter, drizzling with pan juices. To thicken the sauce, strain juices, heat in a saucepan, then whisk in a mixture of 1 tablespoon flour and 2 tablespoons cold water; cook for 2 minutes until thickened.
