Slow Cooker Pork and Potatoes
An easy five-ingredient pork roast with potatoes and baby carrots, flavored with Dijon mustard and thyme, prepared in a slow cooker.

Place potatoes and bell peppers into a 4- to 5-quart slow cooker.

Combine mustard, thyme, salt, and pepper in a small bowl, then spread the mixture evenly over the pork.

Add the seasoned pork on top of the vegetables in the slow cooker, then pour beef broth over all ingredients.

Cover and cook on low for 8 to 9 hours, or 6 to 7 hours if using a hotter slow cooker, until the pork reaches 145 F.

Slice the pork and serve with the cooked vegetables and juices.
