Slow Cooker or Baked Carnival Squash
A sweet carnival squash preparation, easily baked or slow-cooked, offers a versatile side dish.

Instructions

Preheat the oven to 375 F, or butter the slow cooker if using that method.

Remove ends from carnival squash, slice lengthwise, and scoop out seeds; quarter halves optionally.

Brush cut sides with melted butter or olive oil, then sprinkle with salt, pepper, and optionally brown sugar or maple syrup.

If using a slow cooker: Layer prepared squash cut-side up, add 1/3 cup water, cover, and cook on high for 2.5 to 3 hours until fork-tender.

If oven baking: Line a rimmed baking sheet with foil, place squash cut-side up, and bake for 25 to 35 minutes until tender.

Serve the cooked squash whole or mashed.
