Slow Cooker or Baked Carnival Squash

Instructions

  1. Preheat the oven to 375 F, or butter the slow cooker if using that method.

  2. Remove ends from carnival squash, slice lengthwise, and scoop out seeds; quarter halves optionally.

  3. Brush cut sides with melted butter or olive oil, then sprinkle with salt, pepper, and optionally brown sugar or maple syrup.

  4. If using a slow cooker: Layer prepared squash cut-side up, add 1/3 cup water, cover, and cook on high for 2.5 to 3 hours until fork-tender.

  5. If oven baking: Line a rimmed baking sheet with foil, place squash cut-side up, and bake for 25 to 35 minutes until tender.

  6. Serve the cooked squash whole or mashed.
