Slow Cooker Mexican Pulled Pork

Instructions

  1. Trim fat from pork, then place pork and onion in a slow cooker.

  2. Combine barbecue sauce, salsa, herbs, and spices, then pour over the pork.

  3. Cook on low for 8-10 hours until the pork is very tender.

  4. Remove pork and shred it using two forks.

  5. Stir the shredded pork into the sauce from the slow cooker.

  6. Sauté pepper strips in oil until tender.

  7. Spoon the pork filling onto tortillas, top with peppers, and roll them up.
