Slow Cooker Lentils

Instructions

  1. Combine 1 pound rinsed lentils, 2 cups chopped onions, 2 minced garlic cloves, 2 cups undrained diced tomatoes, 2 1/2 cups chicken broth, 2 sliced carrots, 1/2 cup sliced celery, 1 chopped bell pepper, 2 tablespoons chopped fresh parsley, 1 dried bay leaf, 1/2 teaspoon kosher salt, 1/8 teaspoon ground marjoram, 1/8 teaspoon crumbled dried sage, and 1/8 teaspoon dried thyme in a slow cooker.

  2. Cook on high for 2 1/2 to 3 hours, or until lentils are tender.

  3. Stir in 9 ounces shredded cheddar cheese until melted.

  4. Serve hot, topping with additional cheese or parsley if desired, and adjust seasoning with salt and pepper.
